Puran Poli

Poli is sweet flatbread Indian recipe made with Channa dhal and Jaggery. This is scrumptious & mouthwatering recipe combined with flavour of Elachi. My family is great lover of sweets especially my betterhalf. basically this recipe needs two steps. First preparing Puran (Sweet) and secondly to prepare dough to cover the surface. It tastes heavenly when it is smeared with a tsp of ghee.Since the pongal festival is nearing soon, I am thinking to post this recipe that can be useful for all.  Try this recipe for this pongal and enjoy with your family. Ingredients :

To Make outer dough :

Maida / All purpose flour - 1/2 cup
Wheat flour - 1 cup
Turmeric powder - 1 pinch
Melted Ghee - 2 tbsp
Oil - 1/3 cup or 5 tbsp
Salt - 1 pinch

To Make pooranam (Sweet portion) :

Channa Dhal - 1/2 cup
Jaggery - 1/2 cup (grated)
Grated coconut - 2 tbsp
Cardamom powder - 1 pinch
Ghee - 1 tsp


Method :

In a kadai, slightly dry roast channa dhal . Be careful not to burn it. Cool it and soak it in water for  45 mins. Pressure cook it for 2 whistles. Make sure it cooked soft and dont make it mushy. The consistency can be felt if you mash it by fingers. Allow it to cool.

In a mixie, add cooked dhal, cardamom powder and grated coconut. Grind it to smooth powder, without adding water. Lastly add grated jaggery and give a quick pulse once.  Once it becomes smooth powder, add ghee and make it as small lemon sized balls. Now the poornam is ready. keep it aside.

To make the outer dough, in a deep pan, add maida, wheat flour, salt and turmeric powder. Mix all these together. Add oil and little water (If necessary) to make it as fine dough. The consistency of the dough should be very loose than the regular roti dough. Knead it well till you get soft loosen dough. Cover the dough with muslin cloth and allow it to rest for 2 hrs. 

To make perfect tasty poli :

Divide the dough into equal amla sized balls. Take a banana leaf(banana leaf works best and gives nice flavour to poli. Lucky I can get banana leaf in my nearby shop. Alternatively you can use zip lock cover, but be careful while putting it in tava), grease 1 tsp of oil over it.Place a portion of dough and flatten it to disc shaped. Now place the poornam in the centre. Close the edge and gently press to make it flat. Alternatively you can roll it like parathas.

In the mean time, heat the tava. Slowly transfer the flattened poli onto the tawa. Cook it till golden brown on both sides smearing a tsp of Ghee on top.

Serve hot immediately to enjoy its divinely taste.
