Gajar Halwa

A mother of two lovely toddlers & my great friend over a decade who would like to cook yummy recipes everyday. This is her dedication to this blog for celebrating our friendship too.Its really amused to see the reinvent of this blog with lots of Yummy sweets. 

Carrot aka Gajar Ka Halwa is a traditional Indian dessert, usually prepared during festival occasions. And as well carrot is one of the vegetable that is enough packed with beta carotenes and anti oxidants. It is also rich in Vitamin K and B8, folate and pottasium. It controls High cholesterol levels and boosts Immunity. I could add lots benefits of Carrots. Instead of boring through normal lecture, I jump to Yummy post by my friend - "CARROT HALWA".




Ingredients:

Delhi Carrot - 2 cups grated
Fresh Milk - 2 cups
Sugar - 1/2 cup (plus 2 tbsp)
Ghee - 5 tbsp
Elachi powder - 1/2 tsp
Turmeric powder - a pinch
Grated almonds - 1 tsp
Cashews - 3 to 4
Pistachios - 1 tsp
Salt - a pinch

Method :
  
Wash and peel the skin of Carrot. Grate it finely. Keep it aside.

In a pan, add ghee followed by adding fineily chopped cashews, pista with a pinch of Elachi powder. Roast it to brown and keep it aside.

In the same pan, add 2 tsp of Ghee. Add the grated carrots with a pinch of turmeric powder. Fry it in a low medium flame for 2 mins. To this, add 2 cups of milk, pinch of salt and keep stirring till the milk get thickens and carrot gets well cooked. Keep stirring else it will struck at bottom. You can also pressure cook for 2 whistles instead. 

Once the carrot gets cooked well and infused with milk, add sugar, Elachi powder and keep stirring for another 5-10 minutes. Slowly add Ghee little by little to ensure that Halwa get thicken & started leaving the sides of the pan.

Finally add the fried nuts and transfer to serving plate. You can also add a scoop of Vanilla Icecream to Gajar Halwa & serve.

Yummy Halwa is ready to serve.
